After the crop the rice is dried at 50 degrees and then cooled to reduce the water content.
The rice grain is wrapped by an hard and rough shell which is mechanically kep off.
For the white rice we act by a second degree process, it means less aggressive process which permits to maintain contents of proteins, lipids and vitamins. The ‘whitening’ took off the internal cuticle, the germ and other fragments are totally removed.
Last operation is the brushing to eliminate flours that come from previous process.
Before conditioning the rice is controlled by an optical selection machine to take off the grains which show colour or shape defects in order to offer to the consumer an high quality product.
